I have a Master Degree in Dairy Science from the Royal Veterinarian and Agricultural University of Denmark, and I have furthermore a background as laboratory technician. I have an interest in the oxidative stability of the raw milk especially the oxidation of the fats and proteins in milk. I am specifically working with the shelf life of the milk when it is exposed to light or added cupper, and I am interested in the relationship between pro- and antioxidants. Here I am examing a-tocopherol and carotenoids and the relationship between the stereo-isomers of a-tocopherol.
