Profile

I am working in the field of NMR applications in biological materials. It is mainly NMR spectroscopy for metabolic profiling, low-field NMR relaxometry for studying water distribution, and MRI for investigations on structure-related issues in foods.

In relation to NMR spectroscopy I work widely with metabonomic studies on biofluids (blood plasma and urine) and tissues using multivariate data analysis, and with magic-angle spinning studies on muscle- and meat tissue as well as on cell cultures. The technique is applied with the general aim of investigating biochemical effects of various components in the diet, and for investigations on metabolism. NMR spectroscopy is carried out in collaboration with University of Aarhus.

Low-field proton NMR relaxometry for studying water distribution and mobility in muscle and meat. The NMR data are correlated with other biophysical measurements with the aim of obtaining an improved understanding of the relationship between water distribution and biophysical as well as structural changes. NMR measurements are also combined with confocal microscopy.

MRI applications on both proton and sodium in the investigation of post mortem changes in muscle structure as well as inter-diffusion of salt into meat.
