Development of Production Concepts Based on grazing of the Dairy Cows and Gentle Treatment of the Milk during Handling and Processing.

Summary:To establish a basic understanding of i) how feeding with high levels of grass and legumes influence the over all quality of organic milk and dairy products and document how a sustainable, intensive and economic sound dairy production can be obtained together with a high quality organic milk with a composition and flavour different from conventionally produced milk. ii) milking strategies for sustainable milk production based on feeding with high levels of grass and legumes iii) how novel and gentle pasteurisation processes can improve flavour of milk, retain the native enzymes and milk proteins and improve the functionality of the milk for processing, and hereby exploit the necessary knowledge to set up different production concepts covering the chain from production of pasture to consumer perception and willingness to pay for high quality products, which can ensure production of economical sustainable organic milk and dairy products of differentiated and high quality.

Grassland feeding in a farm perspective: The overall objective is to document how a sustainable, intensive and economic sound dairy production can be obtained together with a specified milk quality based on feed supply with high content of leguminous plants.

Specific task are to

• Insure a number of well-documented organic farming units as basis for specific analysis of relations between feeding and milk quality.
• Analyze the effect on herbage production, intake, selection and milk quality of large proportions of different legumes and herds in the pasture.
• Investigate how variation in milk quality can be obtained by change in feeding of the cows both during pasture and indoor feeding
• Development and documentation of strategies for crop production, conservation and feeding during the year focusing on production of organic milk that have a specific flavor, a high content of antioxidants and CLA and are suitable for further processing.
